Recipe: Bacon and Spinach Frittata

Until last week, I was afraid of frittatas.  Not afraid in that I thought it was going to attack me, but afraid in that I thought it would be too difficult or extra complicated for me to cook.

I’m pretty sure you knew which sort of afraid I meant.  I just wanted to make sure you were listening. :)

I received a very lovely enamel cast iron dutch oven for Christmas (I also have the 7 quart) which just so happens to be 10 inches in diameter and therefore perfect for cooking frittatas.  Obviously, a cast iron skillet would be slightly better, but my cast iron skillet is too big to make this particular recipe. 

Anyway, my point is that it turns out frittatas are very easy, and, as long as you have some sort of oven proof skillet or pot, require no extra tools or odd ingredients.  In fact, the great thing about frittatas is that you can put pretty much anything you want into them.  They’re like omelets without all the flipping.  I also find them to be quite frugal as it didn’t require me to buy anything else and helped me use up ingredients I already had on hand.  And they taste good.  It’s a win-win all around.

Bacon, Spinach, and Cheese Frittataserves 1-2
2 slices bacon
2 teaspoons olive oil
1 medium shallot, sliced
4 large eggs
Large handful of baby spinach
cup cheese of your choice (fontina, gruyere, or mozzarella are all good options), diced into small pieces or shredded  
Salt and pepper

Preheat oven to 350°. 

Spray a 10-inch oven proof skillet with cooking spray and heat over medium-high heat.  Add bacon and cook to desire degree of crunchiness, turning occasionally.  Remove bacon from skillet and crumble; set aside.  Wipe bacon grease of skillet, return to heat, and add olive oil*.   Toss in the shallot and cook for about 5 minutes until soft and translucent, but not brown.  You may need to lower the heat to medium low to prevent the shallot from getting brown.  This would also be an excellent time to deglaze the pan with a little white wine to scrape up all the tasty bacon bits that got left behind.  This, of course, is completely optional but completely delicious.

Beat eggs in medium bowl.  Stir in crumbled bacon, spinach, cheese, cooked shallots, and salt and pepper to taste.  Spray your pan again (to ensure the eggs don’t stick) and pour in the egg mixture.  Place back on the stove top, over medium high heat, and cook for 2 minutes.  Transfer to preheated oven and cook until eggs are set, 10-12 minutes. 

Place a plate over the top of the skillet and invert.  As long as your pan was well greased, the frittata should come out evenly.  Serve with toast or a salad to make a complete meal. 

*You can also do as I did, and just use the bacon grease to cook your shallots in.  But that’s just a matter of taste and unhealthiness.

Note: Frittatas can be refrigerated in a sealed Tupperware container for up to three days.  Reheat in a 350° for 5-7 minutes.

Menu Plan Monday

I'm suffering from a major case of writer's block at the moment, so instead of writing some long drawn out story about my weekend (which was fairly boring and involved the Glee marathon and vacuuming), I'm going to ask you to share my menu plan and ask you to tell me about your weekend.  I'm sure yours was way better than mine!

Food Waste Friday



Cooking for one has been a challenge so far.  It’s hard to figure out how much I can actually eat or how many days I’m going to want to eat the leftovers.

I haven’t had a no waste week since I moved, so I’m super excited!  Yay me!

Blogs I Read: Spotlighting My Friends


I have some seriously talented friends.  They craft, the can their own foods, they plan weddings, they sew, they cook, and they blog.  Plus they’re amazing friends.  Seriously, y’all my friends are awesome.  While I love all sorts of blogs, I especially love my friends’ blogs because most of my close friends live far away and blogging is such a great way to keep up with them.  It’s just a side benefit that they are all really talented writers.  

Last week I shared some of my favorite food blogs, and today I wanted to tell you about my friends’ blogs so you can see for yourself just how great they all are.

Christine’s Little Blog – Christine is my best friend; I met her in college (she was my freshman year roommate) and now she lives with her fiancé in Ohio.  Christine is an athletic trainer and she blogs about that, money and personal finance, cross stitching, and what life is like as a future military wife.   

The Life of a Not-So Desperate Housewife – I met Megg in graduate school while we were getting our masters’ in library in information studies.  She’s originally from Massachusetts and now she lives in Seattle with her husband.  Megg blogs about a lot of things including frugality, simple living, decorating, cooking, and her struggles with depression.  She also runs an ongoing series called “I’m Grateful Wednesday” where she shares the things she is feeling grateful. 

Liberal Simplicity – If you’ve been around frugal living or personal finance blogs for a while, you’ve probably heard of Liberal Simplicity (formally Budget Confessions).  Cate is a number of wonderful things, including (but not limited to) a writer, a mother, a wife, an excellent cook, a feminist, and a simplicity junkie.  I’ve never actually met Cate but I was so inspired by her blog and her life (please tell me I’m not the only person who feels this way about certain bloggers) that I emailed her and started corresponding with her on twitter and now we’re even friends on Facebook!  I love making friends online and I’m so happy that I’ve been able to form a connection with someone whose writing I admire.

The DIY Nearlywed – Reese is another friend who’ve I never met but talk to online.  Reese is engaged, working, and planning her wedding.  Needless to say she’s very busy and doesn’t always update daily (which is sad because she’s a great writer!), but when she does post, it’s always really fun.  She has some great series including Random Mondays and Grab Bag where she shares random things she finds from around the web.

With Duck and Goose – Amy is yet another friend I’ve never met. :)  I discovered Amy’s blog through Food Waste Fridays and then started following her on Twitter.  Amy is a bit like me; we’ve both struggled with trying to be “niche” bloggers and realized that we most definitely are not.  Amy blogs about lots of different things including crafting (she has her own Etsy shop!), homeschooling, vegetarian cooking, and simplicity. 

False Dandelions – Ashley is one of the few sorority sisters I actually still talk to.  (Did I ever mention I was in a sorority?  I probably should, there’s a lot to talk about there.)  She’s a journalist who also does a lot of PR and she just got engaged (yay!).  Ashley’s blog is pretty new, but her talent for writing really shines through.  She’s started some cool series including a “What? Wednesday series” that covers some random (and interesting) topics. 

I highly recommend all of these blogs and not just because they are my friends. :)  I hope some of them are new to you and that you check them out!

I Don't Really Have Anything To Say...

So far it's just been one of those weeks. 

Work is really busy - the residents are working on their research projects and keeping me busy doing searches and pulling articles. 

The weather is super gross.  I'm sure many of you are snowed in or are dealing with some terrible winter weather.  Down here in Alabama we aren't getting any of that, just a lot of rain.  My office doesn't have any windows so I didn't realize it was raining when I left to meet my coworker for lunch.  Needless to say I was quite damp and irritated much of the day.

I think, along with the rest of the world, that I'm getting sick.  It may have something to do with the fact it was 73 degrees on Saturday and the high for tomorrow is barely getting out of the 30s. 

So, yeah.  It hasn't been the greatest week.  Nothing terrible has happened, but all of this has made me feel rather blah.  And very unmotivated.  Which may be why I scratched my dinner plans and made boxed mac and cheese and chicken nuggets.  :)  Sometimes we all need some easy-to-make comfort food.

On a slightly different and very random note: I think that flash mobs are awesome.  How amazing would it be part of one?  I've seen this one a few times and thought that I would share it in case you haven't seen it.  Enjoy!

February Goals


I’m doing my monthly and yearly goals a little differently this year.  You can read all about that here.

1.      Budget – Stick to my spending limits.  I set some spending limits last month, but now I’ve got to stick to them.  I may need to redo some of the limits, but I hope to do my best to stick to the limits I’ve set for myself.  I have a feeling that my grocery budget may be the hardest one to stick with, but I’m going to try!
2.      Food – Try at least one new recipe a week.  I’ve done this before, to decent success, so I thought I would give it another shot.  My to-try recipe stack is getting really extreme and trying new recipes is a great way to fix that problem.  I have two new recipes in this week’s menu plan, so that’s a good start so far!
3.      Blogging – Move to my own domain name!  I’m so excited about this goal! I’ve been working with a blog designer and she suggested I go ahead and buy and move to my own domain, so the plan for this month is to buy and move the blog to a new domain.  Get ready for some big changes!
4.      Social – Make plans with friends and stick to them.  I’m keeping this goal from last month because I don’t feel like I kept to it as much as I could have.  I hope to make social plans at least twice a week, but I’m not going to put a requirement on it.  The goal is to avoid turning into a hermit and get my butt off the couch.
5.      Personal – Get back to doing my quiet times.  I’ve fallen off the wagon on this and it’s time to get back on.  It always makes my day better when I start off with a reading and prayer, but I don’t have anything against doing it a night or when I find the time.  As long as I get back into the habit.

Recipe: Cookie Bars

I hate to admit it, but sometimes cookies are too much trouble.  I don’t mind the mixing up and waiting until they're baked, but the scooping, shaping, and spacing evenly onto cookie sheet is just too much trouble sometimes.  Every once and while, I want an easy cookie.  Which is why cookie bars are the perfect solution.  All the taste of delicious cookies, none of the work.  Perfect solution. 

These cookie bars are even better because they have all the taste of an awesome cookie, the ease of a cookie bar, and the texture of a cake.  Oh yes.  This is one excellent dessert.

Cookie Barsadapted from How Sweet It Is

6 tablespoons butter, softened
3/4 cup packed brown sugar
1/2 cup white sugar
2 teaspoons vanilla extract
3 eggs
2 1/4 cups all purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk (I actually forgot the milk and they still turned out pretty decent, just a little dry)
¾ cup chocolate chips (I like milk, but semi-sweet would be good too)
¾ cup white chocolate chips

Preheat oven to 350°.  Spray a 13 x 9 cake pan (or baking dish) with non-stick spray. Layer with parchment paper and spray again.

Cream butter and sugars in the bowl of an electric mixer. Add vanilla, then and add eggs one at a time. In separate bowl, mix flour, baking powder and salt.  Add half of the dry ingredients to the butter mixture, alternating with the milk and ending with the dry ingredients.  Fold in both kinds of chips.   

Pour batter in pan and spread evenly. Bake for 35-45 minutes, or until knife inserted in middle comes out clean.
