Yum! I found this recipe on an apple link round up, and knew that it would fit nicely into my new eating plan. I found this bread to be very moist (especially for a whole wheat bread) with an excellent flavor. I've been eating it for breakfast after lightly toasting it and spreading it with just a little butter (or in my case, SmartBalance).
Applesauce Bread
1 1/2 cups whole wheat flour
1/4 cup honey
1/4 cup honey
1/4 cup sugar, Splenda, or honey, your choice
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup no-sugar added applesauce
2 eggs
1/4 cup butter or buttery spread, melted
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Preheat oven to 350 degrees. Grease an 8x4 loaf pan with baking spray.
Mix together flour, sugar/Splenda (if using), baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center of the dry ingredients and add applesauce, honey, eggs, and melted butter. Mix together until just combined.
Pour into prepared pan and bake 40-50 minutes or until a toothpick comes out clean. Cool in pan 10-15 minutes, then invert on a wire rack.
