I’m back from my trip! I had a great time relaxing on the beach and hanging out with my friends. It was a much needed vacation from work and from reality.

I was super organized last week and prepared my menu so I wouldn’t have to worry about it when I got home. I didn’t eat great while I was away, although I did stick to my Lenten promise and only ate seafood! But I’m really looking forward to some easy and healthy meals this week. I’m continuing to plan my lunches; it went well for the little bit that I was at home last week, so this week will be real the test. I’ll let you know how I did next week.
Sunday
I was supposed to order pizza, but I was too tired from driving all day to even do that. I ended up eating snacky stuff around the house.
Monday
Lunch: out with a friend
Dinner: veggie burger, frozen veggies (cleaning out the freezer)
Tuesday
Lunch: soup, crackers and cheese
Dinner: Lemon Basil Pasta, some sort of bread – I’m thinking either Italian Cheese Twists or Cheesy Garlic Bread Swirls (I’m having friends over for dinner lest you think all of this was for me!)
Wednesday
Lunch: Leftovers
Thursday
Lunch: sandwich, chips and hummus
Dinner: leftovers or something easy
Friday
Lunch: soup, grilled cheese
Dinner: leftovers or something easy

The Cheesy Garlic Bread Swirls ARE. AMAZING. I've made them twice now, and they're great! They are enormous, though, and if you've got less than six people, they're almost a meal unto themselves or there will be plenty of leftovers. We made the mistake of making them along with pizza, and we had a ton of leftover pizza because the rolls were so good but so big. Jay LOVES them. I vote these!

ReplyDeleteSo I'm going out tonight (if I can manage to take the bus out that way). I THINK I'm making lentil veggie soup tonight, with a side salad. Then I'm looking at CLEANING OUT MY PANTRY >< So, we have risotto, pasta, cake mix, beans and pasta sauce... and then veggie burgers, ground turkey and frozen veggies in the freezer. Perhaps a pot-pie night?
I found a recipe for Olive Garden Breadsticks... going to try them this week I think ;)
Thanks to you, I have finally started getting the hang of menu planning. I planned my menu this weekend (choosing stuff that was on sale at the grocery stores) and Rob and I went shopping yesterday. The bill came to $100, but after using my grocery store rewards card (with all the sale stuff and BOGO stuff loaded onto it), it was only $75. I was super excited!!
